Cherry Bomb Cookies

Cherry, Dark Chocolate Chunks and Espresso Filled Cookie Dough.

I know, I know...another cookie recipe! Really? Yes, really. And this one is a stellar recipe.


I just really really love cookies and it is true that cookies have been abundant in my house lately. I have been sending them off to friends and family that I haven’t been able to spend much time with due to social distancing. It’s been a weird time, but sharing cookies, sweets, and recipes with the people I love has been getting me through it all.


it's also true that I have a real soft spot for bitter-sweet flavor combinations: Dark chocolate, coffee, and tart cherries have a tang that I just adore. So this cookie creation probably comes to no one's surprise. If you are a coffee, chocolate, or fruit fan like me you will love these soft little cookies. Not only are they delicious but they are also super easy to make...If you're craving a chocolate chip cookie in the middle of the night, this recipe's for you.

 

Cherry Bomb Cookies

Dark chocolate chip cookies with dried cherries and chocolate-covered coffee beans.

Prep Time:10 minutes |Baking Time: 12 minutes |Total Time: About 22 minutes

Makes: about two dozen medium-sized cookies


Ingredients

  • 1/2 cup chopped dried cherries

  • 1/2 cup dark chocolate chips

  • 1/2 cup chocolate-covered coffee beans (optional, if you don't want the coffee crunch, add 1 cup dark chocolate chips instead of just 1/2 cup.)

  • 14 tablespoons unsalted butter (at room temperature/slightly melty)

  • 1/2 cup granulated sugar

  • 1/2 cup light brown sugar

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 2 1/2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt


Method


1* Preheat your oven to 350° F and prepare three cookie sheets by lining them with parchment paper or spraying them with cooking spray.

2* Place your slightly melty butter, 1/2 cup granulated sugar, and 1/2 cup light brown sugar into a medium-sized mixing bowl or the bowl of an electric stand mixer. Beat the sugars and butter together until they form a light, fluffy mixture.

3* Add in the eggs one at a time, beating the mixture together after each egg is added and making sure that they are fully incorporated but not over-mixing your dough.

4* Add and beat in the vanilla extract.

5* Add in the flour, salt, and baking soda to your wet ingredients. Beat this on low until just combined into a dough.

6*Carefully fold in the cherries, coffee beans, and chocolate chips to your dough being sure to not overwork the dough (mix until everything is just combined).

7* Spoon about one teaspoon of dough onto the prepared baking sheets, forming small dough balls. Make sure each dough ball is about an inch apart from each other, so that they do not spread into each other during baking.

8* Chill your dough in the refrigerator for at least 10 minutes, up to 40 minutes before baking. This keeps the cookies from overly spreading in the oven and keeps the texture soft and chewy.

9* Bake your cookies for 10-12 minutes.

10* Once out of the oven let them cool on the cookie sheets for at least 2 minutes and then transfer them to a metal drying rack to cool all the way through. You can also eat them while they are still warm, just be sure not to burn yourself in any way!

11* serve with coffee, milk, or just enjoy them on their own! :)

A Few Lil' Notes:

  • Once again, this recipe is approved by my dog, Chase.

  • Feel free to use whatever chocolate you want and mix up the flavors!

  • You can save a few cherries, espresso beans, or chocolate chips to place on the tops of your cookies before baking if you want of course. This just makes them look a little prettier and adds more chocolate or cherry flavor!

  • Store them in an air-tight container or freeze to enjoy on a later date!
