Chicken burgers stuffed with spinach, bell peppers, feta cheese, green onions, sun-dried tomatoes, and more. Topped with avocado salsa and grilled red onions. Honestly, I am very proud of this recipe.

Chicken meatballs stuffed with the classic flavors of Italian Caprese Chicken: pesto, sun-dried tomatoes, fresh basil, and gooey mozzarella cheese-balls served on a bed of whole-grain rice noodles! I'm not going to lie this spin on spaghetti and meatballs is one of my favorite recipes I have ever developed.
