I love peaches and I looove cream cheese. I have been seeing a ton of banana bread recipes around lately (shocker right?) and a lot of recipes that incorporate cream cheese in the banana bread itself. Now that, that right there is a bit of baking genius!
It is no secret that banana bread has blown up during this pandemic. I mean, I even jumped on the banana bread baking trend baking my own loaf. But there are so many other amazing and simple bread recipes out there to try! I have made zucchini bread a zillion times, a blueberry lemon bread, and even strawberry loaves. So, I am here to let you know that there are more loaves than banana bread out there and they are just as delicious, maybe even more!
This constant flow of banana bread recipes and the explosion of peaches in Colorado inspired me to develop a peaches and cream loaf, and let me tell you this combination is effortlessly delicious!!
So here it is, my peaches and cream loaf made special for a college crew social distancing dinner party up at my new place. I mean...peaches...cream cheese...AND my much-missed friends? Now that's my recipe for my perfect night.
Peaches And Cream Bread
Difficulty:
Ingredients:
For the Bread:
3/4 cup granulated sugar
1/2 cup milk
1/2 cup canola oil, or coconut
1 egg
2 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
2 cups fresh peaches, diced (about two large peaches)
For The Cream Cheese Filling
6 oz cream cheese (at room temperature/softened)
1/4 cup granulated sugar
1 egg
2 tablespoons of all-purpose flour
Method:
1* Preheat your oven to 350° F.
2* Line a 9*5in Loaf Pan with parchment paper, hanging it over the edges on the longer sides of the tin to remove your bread smoothly later. Grease the sides of the pan where the parchment paper does not touch with a bit of cooking spray for safe measures.
3* In a medium-sized bowl stir together your wet ingredients for the bread (sugar, milk, canola oil, egg, and vanilla extract) until they are just combined.
4* In another bowl mix your dry ingredients for the bread until just combined (the flour, baking powder, and salt).
5* Pour the dry ingredients into the wet and mix until just combined,
6* gently fold your peaches into the batter.
7* Pour 1/3 of the peach bread batter into your prepared loaf pan. Set the rest of the batter aside, you will use it to alternate between the cream cheese mixture on top of the bread.
8* Now we are going to create the cream cheese filling! So, in a small bowl whisk or cream (using a hand mixer) together the cream cheese, egg, sugar, and flour.
9*Add dollops of the cream cheese filling and remaining peach dough to the top of the bread, alternating between the two.
10* Take a knife and swirl the cream cheese filling and peach dollops together to create a swirling effect on the loaf.
11* (OPTIONAL) Preserve a few peach slices to stick on the top of the batter before cooking, as decoration.
12* Bake your loaf for 50-60 minutes, or until a toothpick inserted into the middle of the loaf comes out clean (without any wet batter sticking to it).
13* Remove the loaf from an oven and let it cool down for 10 minutes before transferring it onto a wire cooling rack or removing it from the pan to cool completely.
14* Serve warm with vanilla ice-cream, or an ice-cream of your choice!

Baked fruit loaves are perfect for a brunch, dessert, tea-cake, or as a simple breakfast option.
Breads also freeze great, so you can double the recipe and make a few to freeze and have on a later occasion!
